Apple-curry-tuna Melt

Total Time: 23 mins Preparation Time: 20 mins Cook Time: 3 mins

Ingredients

  • Servings: 4
  • 1 (6 ounce) can tuna, drained and flaked
  • 1/2 cup diced apple
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped green onion
  • 1 -2 teaspoon dijon mustard
  • 1/2-1 teaspoon curry powder
  • salt and pepper
  • 4 slices whole wheat bread, toasted
  • 1/4 cup chopped toasted walnuts
  • 4 slices cheddar cheese (1 oz.)

Recipe

  • 1 in a mixing bowl, add the first 7 ingredients; stir to combine.
  • 2 spread 1/4 cup of the mixture on each slice of toasted bread.
  • 3 sprinkle evenly with walnuts.
  • 4 top with a slice of cheese.
  • 5 place tuna melts on a baking sheet.
  • 6 broil 5 inches away from the heat until the cheese is melted.
