Catfish Cakes

Ingredients

- 1 1/2 lbs catfish fillets
- 2 eggs, beaten
- 1 large potato, peeled,cooked,and mashed
- 1 large onion, finely chopped
- 2 tablespoons chopped fresh parsley
- 2 -3 drops hot sauce
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried basil
- 2 cups finely crushed butter flavored crackers
- vegetable oil
Recipe
- 1 broil catfish fillets in baking pan 5-8 minutes or until fish flakes easily; refrigerate.
- 2 flake cooled fish into a large mixing bowl.
- 3 add eggs, potato, onion, parsley, hot sauce, garlic, salt, pepper, and basil; mix well.
- 4 shape into 8 patties; coat with cracker crumbs.
- 5 heat a small amount of oil in a large skillet.
- 6 cook patties a few at a time, until browned on both sides and heated through.
- 7 serve with tartar sauce or ketchup.
