Catfish Cakes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 1/2 lbs catfish fillets
  • 2 eggs, beaten
  • 1 large potato, peeled,cooked,and mashed
  • 1 large onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 -3 drops hot sauce
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried basil
  • 2 cups finely crushed butter flavored crackers
  • vegetable oil

Recipe

  • 1 broil catfish fillets in baking pan 5-8 minutes or until fish flakes easily; refrigerate.
  • 2 flake cooled fish into a large mixing bowl.
  • 3 add eggs, potato, onion, parsley, hot sauce, garlic, salt, pepper, and basil; mix well.
  • 4 shape into 8 patties; coat with cracker crumbs.
  • 5 heat a small amount of oil in a large skillet.
  • 6 cook patties a few at a time, until browned on both sides and heated through.
  • 7 serve with tartar sauce or ketchup.
