Catfish Fillets In Ginger Sauce

Ingredients

  • Servings: 4
  • 1/2 cup chopped green onion
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon ground ginger
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon wine vinegar
  • 1/8 teaspoon cayenne pepper
  • 4 (6 ounce) catfish fillets

Recipe

  • 1 in a 2-cup microwave-safe bowl, combine onion, oil and ginger.
  • 2 microwave, uncovered, on high for 1 1-1/2 minutes or until onions are tender.
  • 3 in a small bowl, combine cornstarch and water; blend until smooth.
  • 4 add in broth, soy sauce, vinegar and cayenne; mix well.
  • 5 stir into onion mixture.
  • 6 microwave, uncovered, at 70% power for 3-4 minutes, stirring after each minute, until sauce comes to a boil.
  • 7 place catfish in a microwave-safe 3 quart dish.
  • 8 pour sauce over catfish.
  • 9 cover and microwave 5 1/2 to 7 minutes or until the fish flakes easily with a fork.
