Catfish Fillets In Ginger Sauce

Ingredients

- 1/2 cup chopped green onion
- 1 tablespoon vegetable oil
- 1/4 teaspoon ground ginger
- 1 teaspoon cornstarch
- 2 tablespoons water
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon wine vinegar
- 1/8 teaspoon cayenne pepper
- 4 (6 ounce) catfish fillets
Recipe
- 1 in a 2-cup microwave-safe bowl, combine onion, oil and ginger.
- 2 microwave, uncovered, on high for 1 1-1/2 minutes or until onions are tender.
- 3 in a small bowl, combine cornstarch and water; blend until smooth.
- 4 add in broth, soy sauce, vinegar and cayenne; mix well.
- 5 stir into onion mixture.
- 6 microwave, uncovered, at 70% power for 3-4 minutes, stirring after each minute, until sauce comes to a boil.
- 7 place catfish in a microwave-safe 3 quart dish.
