Cape May Scallops

Total Time: 16 mins Preparation Time: 10 mins Cook Time: 6 mins

Ingredients

  • Servings: 6
  • 1/2 cup plain breadcrumbs
  • 1/4 teaspoon salt
  • 1 lb medium sea scallops
  • 2 tablespoons olive oil
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 teaspoon chopped freshly parsley
  • 1/2 teaspoon minced garlic
  • 1/4 cup wine
  • 2 tablespoons fresh lemon juice

Recipe

  • 1 combine breadcrumbs and salt in medium bowl, add scallops and toss to coat.
  • 2 heat oil and butter in large skillet over high heat.
  • 3 add parsley and garlic, cook 20 seconds.
  • 4 add scallops and cook 4-5 minutes, turning once, until browned.
  • 5 add wine and lemon juice, cook 1 minute more.
  • 6 for appetizers, transfer to heated scallop shells, if desired.
