Ingredients

- 1/2 cup plain breadcrumbs
- 1/4 teaspoon salt
- 1 lb medium sea scallops
- 2 tablespoons olive oil
- 2 tablespoons butter or 2 tablespoons margarine
- 1 teaspoon chopped freshly parsley
- 1/2 teaspoon minced garlic
- 1/4 cup wine
- 2 tablespoons fresh lemon juice
Recipe
- 1 combine breadcrumbs and salt in medium bowl, add scallops and toss to coat.
- 2 heat oil and butter in large skillet over high heat.
- 3 add parsley and garlic, cook 20 seconds.
- 4 add scallops and cook 4-5 minutes, turning once, until browned.
- 5 add wine and lemon juice, cook 1 minute more.
- 6 for appetizers, transfer to heated scallop shells, if desired.
