Crawfish Cornbread! Appetizer!

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 20
  • 1 (8 1/2 ounce) box jiffy corn muffin mix
  • 1/2 cup butter, melted
  • 3 large eggs, beaten
  • 1 cup colby cheese or 1 cup monterey jack cheese, grated
  • 1 cup chopped yellow onion
  • 1 cup green onion, sliced, tops included
  • 1 (10 ounce) can rotel tomatoes, drained
  • 1 (12 ounce) package crawfish, thawed and drained

Recipe

  • 1 combine all ingredients and mix well.
  • 2 put in greased 9x11 baking dish.
  • 3 bake at 350°f for 40-45 minute.
  • 4 serve hot or cold cut into small squares.
