Cajun Crab Rice

Ingredients

- 8 ounces imitation crabmeat, diced
- 1/4 cup cajun marinade (or use a liberal amount of dry cajun seasoning)
- 1 tablespoon oil
- 1 cup onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1 small tomato, diced
- 1/8 teaspoon red pepper (optional)
- 1 cup instant rice
- 1 cup water
Recipe
- 1 in a large skillet, heat oil to medium high.
- 2 add onions and peppers and cook for 5 minutes until tender.
- 3 stir in all other ingredients and bring to a boil.
- 4 cover and remove from heat, let stand 5 minutes.
