Baked Catfish With Cormeal Crust

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 catfish fillets, halved
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup fine cornmeal
  • salt
  • cayenne pepper
  • lemon wedge

Recipe

  • 1 season cornmeal with salt and cayenne.
  • 2 rinse fish, pat dry.
  • 3 dredge in flour, then egg, then cornmeal.
  • 4 bake at 450 on lowest shelf of oven for 10 minutes, turning after 5 minutes.
  • 5 serve with lemon.
