Clam Chowder

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/4 cup butter
  • 2 onions, finely chopped
  • 1/4 cup flour
  • 4 cups milk
  • 3 medium potatoes, peeled & diced
  • 1 teaspoon thyme
  • 1/4 teaspoon salt (or more to taste)
  • 1/4 teaspoon pepper
  • 2 (5 ounce) cans clams (with juice)
  • 3 slices bacon, cooked crisp
  • 1/2 cup crouton (sourdough are really good)
  • 3 green onions, chopped

Recipe

  • 1 melt butter & cook onions until soft, but not brown. stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).
  • 2 cool slightly & whisk in milk. bring to a boil. add potatoes, thyme, salt and pepper. lower heat, cover & simmer for 20 minutes (until potatoes are tender).
  • 3 add clams with juice & heat through. do not boil. taste & adjust seasoning (if necessary).
  • 4 serve & garnish with bacon, croutons & green onions.
