Clam Chowder

Ingredients
- Servings: 4
- 1/4 cup butter
- 2 onions, finely chopped
- 1/4 cup flour
- 4 cups milk
- 3 medium potatoes, peeled & diced
- 1 teaspoon thyme
- 1/4 teaspoon salt (or more to taste)
- 1/4 teaspoon pepper
- 2 (5 ounce) cans clams (with juice)
- 3 slices bacon, cooked crisp
- 1/2 cup crouton (sourdough are really good)
- 3 green onions, chopped
Recipe
- 1 melt butter & cook onions until soft, but not brown. stir in flour & cook, stirring, for 5 minutes over medium-low heat (to get rid of raw taste).
- 2 cool slightly & whisk in milk. bring to a boil. add potatoes, thyme, salt and pepper. lower heat, cover & simmer for 20 minutes (until potatoes are tender).
- 3 add clams with juice & heat through. do not boil. taste & adjust seasoning (if necessary).
- 4 serve & garnish with bacon, croutons & green onions.
