Citrus-dill Chicken

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 tablespoons low-fat ranch dressing
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch
  • 1 tablespoon dill
  • 1 cup chicken broth
  • 2 boneless skinless chicken breast halves
  • 1/4 cup chopped scallion
  • 1 cup sliced fresh mushrooms

Recipe

  • 1 slice chicken breasts into thin sections.
  • 2 they will look like fish fillets when sliced properly.
  • 3 you should get 2-3 sections from each breast half.
  • 4 cook chicken in skillet sprayed with pam or equivalent until chicken is cooked thoroughly and slightly browned.
  • 5 set aside somewhere it will stay warm.
  • 6 saute scallions and mushrooms until tender.

  • 8 in microwave-safe bowl, combine cornstarch and chicken broth.
  • 9 microwave on high for 1 minute.
  • 10 stir.
  • 11 microwave on high for 1 additional minute.
  • 12 stir.
  • 13 add lemon juice, ranch dressing, and dill to broth mixture.
  • 14 stir until well mixed and smooth.
  • 15 top chicken with mushrooms and scallions.
  • 16 serve sauce over chicken.
