Bridgetown Potatoes & West Indian Style Shrimp Scampi

Ingredients

  • Servings: 4
  • 3 lbs potatoes
  • 1 onion, finely chopped
  • 1/2 cup butter
  • 1/2 teaspoon poultry seasoning
  • salt and pepper
  • 3 lbs fresh shrimp
  • 1/2 fresh lemon
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon thyme
  • 1/2 teaspoon curry powder
  • 1 cup butter
  • flour

Recipe

  • 1 bidgetown potatoes.
  • 2 boil potatoes with skin on.
  • 3 after potatoes are cooked and cool enough to handle, peel and dice.
  • 4 melt butter in heavy skillet.
  • 5 add potatoes, onion, poultry seasoning, salt and pepper to taste.
  • 6 saute over very low flame until brown.
  • 7 serve with shrimp scampi.
  • 8 shrimp scampi.
  • 9 cook the shrimp in boiling water with lemon half.
  • 10 after the shrimp is cooked and cool enough to handle, shell and devein.
  • 11 mix together the pepper, garlic powder, tobasco sauce, poultry seasoning, thyme and curry powder.
  • 12 marinate the shrimp in this mixture for approximately 35 minutes.
  • 13 melt the butter in a heavy skillet.
  • 14 dip the shrimp in flour and fry until golden brown.
  • 15 serve with bridgetown potatoes.
