Bridgetown Potatoes & West Indian Style Shrimp Scampi

Ingredients

- 3 lbs potatoes
- 1 onion, finely chopped
- 1/2 cup butter
- 1/2 teaspoon poultry seasoning
- salt and pepper
- 3 lbs fresh shrimp
- 1/2 fresh lemon
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon tabasco sauce
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon thyme
- 1/2 teaspoon curry powder
- 1 cup butter
- flour
Recipe
- 1 bidgetown potatoes.
- 2 boil potatoes with skin on.
- 3 after potatoes are cooked and cool enough to handle, peel and dice.
- 4 melt butter in heavy skillet.
- 5 add potatoes, onion, poultry seasoning, salt and pepper to taste.
- 6 saute over very low flame until brown.
- 7 serve with shrimp scampi.
- 8 shrimp scampi.
- 9 cook the shrimp in boiling water with lemon half.
- 10 after the shrimp is cooked and cool enough to handle, shell and devein.
- 11 mix together the pepper, garlic powder, tobasco sauce, poultry seasoning, thyme and curry powder.
- 12 marinate the shrimp in this mixture for approximately 35 minutes.
- 13 melt the butter in a heavy skillet.
- 14 dip the shrimp in flour and fry until golden brown.
- 15 serve with bridgetown potatoes.
