Clams With Angel Hair Pasta

Ingredients

- 1/2 vidalia onion
- 1 large plum tomato
- 1/3 cup olive oil
- 3 cloves garlic
- 1 (14 ounce) can baby clams, with juice
- 200 g angel hair pasta
- cracked black pepper
- salt
Recipe
- 1 coarsely chop onion coarsely dice tomato.
- 2 crush garlic.
- 3 heat olive oil in large frying pan on medium high heat.
- 4 add garlic to pan and brown for about 30 seconds.
- 5 add onion and fry about 2 minutes.
- 6 add tomato and fry about 2 minutes.
- 7 add clams with juice.
- 8 add salt and pepper to taste.
- 9 let mixture bubble until reduced by half (about 3-4 minutes).
- 10 serve over angel hair pasta.
