Clams Casino

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 dozen littleneck clams
  • 1 cup butter
  • 1 lb bacon
  • 1 onion
  • 1 1/2 green bell peppers
  • 1 red bell pepper
  • tabasco sauce
  • plain breadcrumbs

Recipe

  • 1 steam clams, remove and chop. wash the shells and let them dry.
  • 2 slice bacon into small pieces and brown. drain and set aside. remove bacon fat and melt butter. add onions (until translucent) and peppers. add seasoned salt and tabasco to taste.
  • 3 remove from heat add bacon and clams. slowly add bread crumbs until the butter is incorporated. try not to use a lot of bread crumb.
  • 4 stuff the clam shells. add some lemon juice on each and broil 15 minutes (top will brown).
