Clam & Sausage Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 8 ounces italian sausage, chopped
  • 1 cup fresh mushrooms, chopped
  • 1/2 teaspoon minced garlic
  • 1 (28 ounce) can diced tomatoes
  • 1 (8 ounce) bottle clam juice
  • 1 (10 ounce) can baby clams
  • garlic-flavored croutons

Recipe

  • 1 in a large sauce pan with oil, saute garlic, sausage and mushrooms.
  • 2 stir in tomatoes, clam juice, and clams.
  • 3 bring to a boil.
  • 4 spoon into bowls; top with garlic croutons if desired.
