Clam Crunch

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon parsley, minced
  • 8 tablespoons sour cream (optional)
  • 6 1/2 ounces minced clams, drained (reserve liquid)
  • 1 egg, beaten
  • 2 cups rice chex
  • oil, for frying

Recipe

  • 1 in a medium bowl, combine flour, baking powder, salt, pepper, and parsley.
  • 2 slowly stir in clam liquid until smooth.
  • 3 add eggs and clams, mix well.
  • 4 stir in cereal to coat.
  • 5 let stand 10 minutes.
  • 6 stir to combine.
  • 7 heat oi to an 1/8- inch depth in skillet.
  • 8 drop 1 heaping tablespoon of clam mixture into hot oil.
  • 9 pat with a spoon to form 3- inch patty. repeat to form 8 patties.
  • 10 brown over medium heat. turn and brown other side.
  • 11 drain on paper towels.
  • 12 serve immediately topped with sour cream.
