Clam Crunch

Ingredients

- 1/4 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon parsley, minced
- 8 tablespoons sour cream (optional)
- 6 1/2 ounces minced clams, drained (reserve liquid)
- 1 egg, beaten
- 2 cups rice chex
- oil, for frying
Recipe
- 1 in a medium bowl, combine flour, baking powder, salt, pepper, and parsley.
- 2 slowly stir in clam liquid until smooth.
- 3 add eggs and clams, mix well.
- 4 stir in cereal to coat.
- 5 let stand 10 minutes.
- 6 stir to combine.
- 7 heat oi to an 1/8- inch depth in skillet.
- 8 drop 1 heaping tablespoon of clam mixture into hot oil.
- 9 pat with a spoon to form 3- inch patty. repeat to form 8 patties.
- 10 brown over medium heat. turn and brown other side.
- 11 drain on paper towels.
- 12 serve immediately topped with sour cream.
