Citrus Crusted Tuna

Ingredients

  • Servings: 4
  • 4 tuna steaks (1 inch thick)
  • olive oil
  • salt
  • pepper
  • 1/2 cup grated horseradish
  • 2 tablespoons orange zest (blanched)
  • 2 tablespoons lime zest (blanched)
  • 2 tablespoons orange juice
  • creole mustard

Recipe

  • 1 season tuna with salt and pepper.
  • 2 in a small bowl, combine the horseradish, citrus zest, juice, and season with salt and pepper, and set aside.
  • 3 brush one side of the tuna with creole mustard.
  • 4 press crust into mustard.
