Chef-boy-i-be-illinois' Salmon Stew

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 yellow onion, chopped
  • 4 tablespoons olive oil
  • 1/2 cup chopped celery
  • 1 (14 1/2 ounce) can chopped tomatoes with juice
  • 4 cups chicken broth
  • 1 cup dry wine
  • 1 lb fresh salmon, cubed
  • 8 ounces fresh baby spinach leaves
  • 1 (12 ounce) bag kluski noodles (or other type noodle)
  • salt & freshly ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Recipe

  • 1 saute onion in olive oil until lightly carmelized.
  • 2 add celery and saute 2 minutes.
  • 3 add tomatoes, broth and wine and bring to boil.
  • 4 add salmon and spinach leaves and simmer 5 minutes.
  • 5 add noodles and simmer 15 minutes until noodles are tender.
  • 6 add salt, pepper and red pepper to taste.
  • 7 serve with parmesan to sprinkle, and some crusty bread on the side and you are set.
  • 8 wonderful served with some fresh fruit and yogurt for dessert.
