Chef-boy-i-be-illinois' Salmon Stew

Ingredients
- Servings: 4
- 1 yellow onion, chopped
- 4 tablespoons olive oil
- 1/2 cup chopped celery
- 1 (14 1/2 ounce) can chopped tomatoes with juice
- 4 cups chicken broth
- 1 cup dry wine
- 1 lb fresh salmon, cubed
- 8 ounces fresh baby spinach leaves
- 1 (12 ounce) bag kluski noodles (or other type noodle)
- salt & freshly ground black pepper
- 1/2 teaspoon red pepper flakes (optional)
Recipe
- 1 saute onion in olive oil until lightly carmelized.
- 2 add celery and saute 2 minutes.
- 3 add tomatoes, broth and wine and bring to boil.
- 4 add salmon and spinach leaves and simmer 5 minutes.
- 5 add noodles and simmer 15 minutes until noodles are tender.
- 6 add salt, pepper and red pepper to taste.
- 7 serve with parmesan to sprinkle, and some crusty bread on the side and you are set.
- 8 wonderful served with some fresh fruit and yogurt for dessert.
