Baked Turbans Of Sole

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 teaspoon butter
  • 1/2 cup finely chopped onion
  • 4 sole or 4 flounder fillets
  • 1 cup tomato sauce
  • 1/2 cup dry wine
  • 1/4 cup bottled clam juice
  • salt and pepper
  • 1 teaspoon chopped parsley

Recipe

  • 1 heat oven to 400. spread butter over bottom of a shallow baking dish.
  • 2 sprinkle chopped onion over butter. roll up fish, secure with toothpicks and stand them open-end down on onions.
  • 3 in a small saucepan, combine tomato sauce, wine and clam juice. heat to boiling. pour over fish.
  • 4 bake 15 minutes or until just opaque throughout. season with salt and pepper. garnish with parsley before serving.
