Ingredients

- 1 teaspoon butter
- 1/2 cup finely chopped onion
- 4 sole or 4 flounder fillets
- 1 cup tomato sauce
- 1/2 cup dry wine
- 1/4 cup bottled clam juice
- salt and pepper
- 1 teaspoon chopped parsley
Recipe
- 1 heat oven to 400. spread butter over bottom of a shallow baking dish.
- 2 sprinkle chopped onion over butter. roll up fish, secure with toothpicks and stand them open-end down on onions.
- 3 in a small saucepan, combine tomato sauce, wine and clam juice. heat to boiling. pour over fish.
- 4 bake 15 minutes or until just opaque throughout. season with salt and pepper. garnish with parsley before serving.
