Crawfish Etoufee

Ingredients
- 1/4 cup butter
- 2 tablespoons olive oil
- 1/4 cup flour
- 1 medium onion, chopped
- 2 celery ribs, chopped
- 1 green bell pepper, chopped
- 4 garlic cloves, minced
- 2 teaspoons cajun seasoning
- 1/2 teaspoon ground red pepper
- 1 (14 ounce) can chicken broth
- 1/4 cup chopped parsley
- 1/4 cup chopped chives
- 2 lbs cooked peeled crawfish tails
Recipe
- 1 melt butter with oil in a dutch oven.
- 2 stir in flour and cook stirring constantly 5 minutes or until caramel colored.
- 3 add onion and next 6 ingriedients and cook 5 more minutes.
- 4 add chicken broth, parsely and chives.
- 5 cook 5 minutes.
- 6 stir in crawfish and cook 5 more minutes.
- 7 serve with hot cooked rice.
