Crawfish Etoufee

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1/4 cup butter
  • 2 tablespoons olive oil
  • 1/4 cup flour
  • 1 medium onion, chopped
  • 2 celery ribs, chopped
  • 1 green bell pepper, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons cajun seasoning
  • 1/2 teaspoon ground red pepper
  • 1 (14 ounce) can chicken broth
  • 1/4 cup chopped parsley
  • 1/4 cup chopped chives
  • 2 lbs cooked peeled crawfish tails

Recipe

  • 1 melt butter with oil in a dutch oven.
  • 2 stir in flour and cook stirring constantly 5 minutes or until caramel colored.
  • 3 add onion and next 6 ingriedients and cook 5 more minutes.
  • 4 add chicken broth, parsely and chives.
  • 5 cook 5 minutes.
  • 6 stir in crawfish and cook 5 more minutes.
  • 7 serve with hot cooked rice.
