Clam Chowder

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 5
  • 6 slices bacon, diced
  • 1/2 cup finely chopped onion
  • 2 (10 3/4 ounce) cans condensed cream of potato soup, undiluted
  • 1 1/2 cups milk
  • 3 (6 1/2 ounce) cans minced clams, undrained
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • minced fresh parsley

Recipe

  • 1 in a large saucepan, cook bacon over medium heat until crisp; remove to paper towels.
  • 2 drain drippings, reserving 1 tablespoon.
  • 3 in the drippings, saute onion until tender.
  • 4 stir in soup and milk.
  • 5 add the clams, lemon juice, thyme, pepper and bacon; heat through.
  • 6 garnish with parsley.
