Citrus Catfish

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 lbs catfish, whole, skinned
  • 1 orange
  • 1 lime
  • 1 tablespoon basil, fresh, chopped
  • 1 teaspoon mint leaf, fresh, chopped
  • 1/2 tablespoon extra virgin olive oil

Recipe

  • 1 slice orange and lime thin.
  • 2 in belly cavity overlap and alternate orange and lime slices.
  • 3 rub fish lightly with olive oil.
  • 4 sprinkle basil and mint over both sides of catfish.
  • 5 overlap and alternate orange and lime slices on top of catfish.
  • 6 bake at 325 degrees f until meat flakes with fork. about 20 minutes.
