Citrus Catfish

Ingredients

- 4 lbs catfish, whole, skinned
- 1 orange
- 1 lime
- 1 tablespoon basil, fresh, chopped
- 1 teaspoon mint leaf, fresh, chopped
- 1/2 tablespoon extra virgin olive oil
Recipe
- 1 slice orange and lime thin.
- 2 in belly cavity overlap and alternate orange and lime slices.
- 3 rub fish lightly with olive oil.
- 4 sprinkle basil and mint over both sides of catfish.
- 5 overlap and alternate orange and lime slices on top of catfish.
- 6 bake at 325 degrees f until meat flakes with fork. about 20 minutes.
