Chili Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 red onion, finely diced
  • 500 g ground chicken
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 red capsicum, finely chopped
  • 1 tablespoon fish sauce
  • 2 tablespoons sweet chili sauce
  • salt and pepper
  • 2 tablespoons chopped coriander

Recipe

  • 1 heat oil in frypan.
  • 2 add onion - cook 3 minutes till soft.
  • 3 add chicken and garlic and ginger.
  • 4 cook 7 minutes till browned.
  • 5 break up lumps of mince with wooden spoon whilst cooking.
  • 6 add capsicum and cook further 5 minutes.
  • 7 add fish sauce and sweet chili sauce and season to taste.
  • 8 stir in coriander.
  • 9 serve with noodles or rice or toss through salad leaves.
