Chili Chicken

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 1 red onion, finely diced
- 500 g ground chicken
- 2 teaspoons minced garlic
- 2 teaspoons minced ginger
- 1 red capsicum, finely chopped
- 1 tablespoon fish sauce
- 2 tablespoons sweet chili sauce
- salt and pepper
- 2 tablespoons chopped coriander
Recipe
- 1 heat oil in frypan.
- 2 add onion - cook 3 minutes till soft.
- 3 add chicken and garlic and ginger.
- 4 cook 7 minutes till browned.
- 5 break up lumps of mince with wooden spoon whilst cooking.
- 6 add capsicum and cook further 5 minutes.
- 7 add fish sauce and sweet chili sauce and season to taste.
- 8 stir in coriander.
- 9 serve with noodles or rice or toss through salad leaves.
