Charred Sugar And Chili Crusted Salmon

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 -6 salmon fillets, skin removed
  • 2 tablespoons oil
  • 2 tablespoons sugar
  • 1 tablespoon chili powder
  • 1 teaspoon black pepper
  • 1/2 tablespoon cumin
  • 1/2 tablespoon paprika
  • 1/2 tablespoon salt
  • 1/4 teaspoon dry mustard
  • 1 pinch cinnamon

Recipe

  • 1 belnd all ingredients for dry sugar rub.
  • 2 generously coat only one side of each skinnless fillet with rub.
  • 3 heat oil in a heavy pan over high heat.
  • 4 carefully place salmon in pan- seasoned side down.
  • 5 cook 2 minutes to sear, then turn over fillets.
  • 6 reduce heat to medium and continue cooking 6-8 minutes until just opaque throughout.
