Charlie's Halibut Olympia

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lbs halibut fillets
  • 1/2 cup butter, melted
  • 1 yellow onion
  • 1 -8 ounce sour cream (1 c.)
  • 1 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoning salt (johnnys)
  • 1 teaspoon black pepper
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1/2 cup parmesan cheese, shredded
  • 1/2 cup plain breadcrumbs

Recipe

  • 1 preheat oven to 400°f.
  • 2 cut halibut into entree size portions - approximately 3x4 inches.
  • 3 chop onions finely and sprinkle in 13x9x2 baking pan and pour melted butter over top.
  • 4 place halibut filets in single layer over top of onions.
  • 5 combine sour cream, mayonnaise, garlic powder, salt, pepper, basil and thyme.
  • 6 cover halibut with sauce and top with bread crumbs.
  • 7 bake at 400°f for 20 minutes.
  • 8 remove from oven and top with parmesan and return to oven for 10 minutes or until golden brown.
  • 9 fish is done when it flakes easily with a fork. it should be and moist.
  • 10 serve hot with rice pilaf and a green vegetable.
  • 11 to half recipe - half all ingredients except butter and onion.
