Baked Lemon-pepper Salmon

Ingredients

- 1/2 cup shallot, chopped
- 1/4 cup capers, drained
- 1 teaspoon dried dill
- 1 1/4 lbs salmon fillets
- 1 tablespoon lemon pepper
- 2 tablespoons butter
- lemon wedge
Recipe
- 1 preheat oven to 425.
- 2 place large sheet of foil on baking sheet.
- 3 spray foil with vegetable oil spray.
- 4 mix shallots, capers and dill in small bowl.
- 5 place salmon on foil; sprinkle with lemon pepper seasonings.
- 6 spread shallot mixture over salmon.
- 7 dot with butter.
- 8 fold up foil edges to enclose salmon; seal.
- 9 bake salmon just until opaque in center, about 28 minutes.
- 10 open foil; transfer salmon to platter.
- 11 spoon any juices over.
- 12 garnish with lemon wedges and serve.
