Baked Fish With Crispy Herbed Shrimp Topping

Ingredients

- 1/4 cup fresh lemon juice
- 1/2 cup dry wine
- 1 clove minced garlic
- 1/2 cup olive oil
- 4 red snapper fillets or 4 similiar fish
- 1/2 lb fresh shrimp, cooked,shelled and chopped
- 1/4 cup minced onion
- 1 clove minced garlic
- 1/4 cup minced parsley
- 1 tablespoon chopped capers
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried tarragon
- 1 cup dry breadcrumbs
- 1/4 cup mayonnaise
- 1/3 cup freshly grated parmesan cheese
- lemon wedge (to garnish)
Recipe
- 1 make the marinade: whisk together the first four ingredients, adding salt and pepper to taste place the fish in one layer in a baking dish, skin side up.
- 2 pour all but 1/4 cup marinade over the fish and let them marinate, covered, in the refrigerator for 3 hours.
- 3 stir together the shrimp, onion, garlic, parsley, capers, basil, tarragon, crumbs, mayonnaise, parmesan and the remaining marinade.
- 4 salt and pepper to taste, and mix until combined well.
- 5 bake the fillets in the marinade, skin side down, in the middle of a preheated 400 degree oven for 10 minutes.
- 6 spread evenly with the topping and cook for 10 minutes more, until topping is light golden brown.
- 7 serve with lemon wedges.
