Baked Fish With Crispy Herbed Shrimp Topping

Ingredients

  • Servings: 4
  • 1/4 cup fresh lemon juice
  • 1/2 cup dry wine
  • 1 clove minced garlic
  • 1/2 cup olive oil
  • 4 red snapper fillets or 4 similiar fish
  • 1/2 lb fresh shrimp, cooked,shelled and chopped
  • 1/4 cup minced onion
  • 1 clove minced garlic
  • 1/4 cup minced parsley
  • 1 tablespoon chopped capers
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried tarragon
  • 1 cup dry breadcrumbs
  • 1/4 cup mayonnaise
  • 1/3 cup freshly grated parmesan cheese
  • lemon wedge (to garnish)

Recipe

  • 1 make the marinade: whisk together the first four ingredients, adding salt and pepper to taste place the fish in one layer in a baking dish, skin side up.
  • 2 pour all but 1/4 cup marinade over the fish and let them marinate, covered, in the refrigerator for 3 hours.
  • 3 stir together the shrimp, onion, garlic, parsley, capers, basil, tarragon, crumbs, mayonnaise, parmesan and the remaining marinade.
  • 4 salt and pepper to taste, and mix until combined well.
  • 5 bake the fillets in the marinade, skin side down, in the middle of a preheated 400 degree oven for 10 minutes.
  • 6 spread evenly with the topping and cook for 10 minutes more, until topping is light golden brown.
  • 7 serve with lemon wedges.
