Asparagus, Thyme And Tomato Halibut

Ingredients

  • Servings: 4
  • 1 lb fresh asparagus
  • 1 3/4 cups cherry tomatoes, halved
  • salt & fresh ground pepper, to taste
  • 4 sprigs fresh thyme
  • 4 (4 ounce) halibut fillets
  • 1 lemon, juice of
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh dill (optional)
  • 4 lemon slices (as garnish)

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 trim asparagus and lay on bottom of a medum-sized baking dish.
  • 3 scatter cherry tomatoes on top.
  • 4 sprinkle with salt and pepper.
  • 5 lay thyme sprigs on top.
  • 6 place halibut on the bed of asparagus.
  • 7 combine lemon juice and olive oil and drizzle over halibut.
  • 8 sprinkle with additional salt and pepper, if desired.
  • 9 roast uncovered for 18 to 20 minutes, or until fish is done.
  • 10 sprinkle with dill, if desired.
  • 11 serve with sliced lemon.
