Colcannon (mashed Potatoes With Cabbage)

Ingredients

- 3 cups green cabbage, finely chopped
- 1 onion, finely chopped
- 1/2 cup water
- 6 cooked potatoes, mashed or 4 cups instant mashed potatoes
- 1/4 cup milk
- 1/4 cup butter
- 1 tablespoon salt, to taste
- 1 1/2 teaspoons pepper, to taste
Recipe
- 1 put cabbage, onion, and water in saucepan.
- 2 bring to boil over high heat and reduce to simmer, cover and cook for 8 minutes or until tender, but not mushy.
- 3 drain cabbage and onion.
- 4 add mashed potatoes, milk, butter and salt and pepper to taste.
- 5 mix well to blend and heat through.
- 6 serve warm, as a side dish with meat, chicken or fish.
