Colcannon (mashed Potatoes With Cabbage)

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 cups green cabbage, finely chopped
  • 1 onion, finely chopped
  • 1/2 cup water
  • 6 cooked potatoes, mashed or 4 cups instant mashed potatoes
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 tablespoon salt, to taste
  • 1 1/2 teaspoons pepper, to taste

Recipe

  • 1 put cabbage, onion, and water in saucepan.
  • 2 bring to boil over high heat and reduce to simmer, cover and cook for 8 minutes or until tender, but not mushy.
  • 3 drain cabbage and onion.
  • 4 add mashed potatoes, milk, butter and salt and pepper to taste.
  • 5 mix well to blend and heat through.
  • 6 serve warm, as a side dish with meat, chicken or fish.
