Cod In Pine Nut Sauce

Ingredients

  • 3/4 cup toasted pine nuts
  • 2 slices whole wheat bread
  • 1 garlic clove
  • 1 tablespoon lemon juice
  • 1 cup fish stock or 1 cup chicken broth
  • 1 tablespoon parsley, chopped
  • 1 tablespoon butter
  • 1 lemon, the rind of, finely shredded
  • 4 cod fish fillets

Recipe

  • 1 for the sauce:.
  • 2 place the pine nuts, bread, garlic, lemon juice and stock or broth in a food processor and pulse until smooth.
  • 3 pour into a small sauce pan, sprinkle with the parsley and heat through.
