Carolyn's Shrimp Creole

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1 cup oil
  • 1 cup flour
  • 2 cups chopped onions
  • 1 cup chopped bell pepper
  • 2 cloves garlic, chopped
  • 1 can tomato
  • 1 can tomato sauce
  • 2 cans tomato paste
  • 6 cups water
  • 1 tablespoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper
  • 2 cans okra
  • 2 lbs raw shrimp, peeled & deveined
  • 1 lb smoked sausage, thinly sliced
  • hot, cooked rice

Recipe

  • 1 in a large stock pot, heat oil until hot, stir in flour.
  • 2 cook flour stirring often until flour reaches a medium brown color.
  • 3 add onions, peppers and garlic.
  • 4 cook until soft.
  • 5 add tomatoes, tomato sauce& paste, mix well.
  • 6 cook about 5 minutes.
  • 7 add salt, water, red& black peppers.
  • 8 fry sausage in a separate skillet and drain excess fat.
  • 9 add sausage and okra.
  • 10 simmer about 1 hour.
  • 11 add shrimp, cook 15 minutes.
  • 12 serve with hot cooked rice.
