Apricot-mustard Crusted Catfish

Ingredients
- Servings: 4
- 4 catfish fillets
- 2 tablespoons apricot jam
- 1 tablespoon dijon mustard
- 1/4 cup grated parmesan cheese
- 1 cup fine fresh breadcrumb
Recipe
- 1 combine the jam, mustard and cheese in a small bowl.
- 2 wash and pat dry the catfish fillets.
- 3 spread the mustard mixture on both sides of the fillets.
- 4 cover each fillet with fine bread crumbs.
- 5 place in a lightly buttered baking dish.
- 6 recipe may be prepared to this point and held refrigerated until needed.
- 7 when ready to served, place the baking dish in a preheated 350 degree oven for about 20 minutes.
- 8 serve immediately.
