Apricot-mustard Crusted Catfish

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 catfish fillets
  • 2 tablespoons apricot jam
  • 1 tablespoon dijon mustard
  • 1/4 cup grated parmesan cheese
  • 1 cup fine fresh breadcrumb

Recipe

  • 1 combine the jam, mustard and cheese in a small bowl.
  • 2 wash and pat dry the catfish fillets.
  • 3 spread the mustard mixture on both sides of the fillets.
  • 4 cover each fillet with fine bread crumbs.
  • 5 place in a lightly buttered baking dish.
  • 6 recipe may be prepared to this point and held refrigerated until needed.
  • 7 when ready to served, place the baking dish in a preheated 350 degree oven for about 20 minutes.
  • 8 serve immediately.
