Breaded Sea Scallops

Ingredients

  • Servings: 4
  • 2 eggs
  • 2/3 cup mashed potato flakes
  • 2/3 cup seasoned bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 lbs sea scallops
  • 4 tablespoons butter
  • 2 tablespoons olive oil

Recipe

  • 1 in a bowl, beat the egg.
  • 2 in another bowl, combine the potato flakes, bread crumbs, salt and pepper.
  • 3 dip scallops in egg, then coat with potato mixture.
  • 4 in a large skillet, heat butter and oil over medium heat.
  • 5 add scallops and cook for 4-5 minutes or until scallops are opaque and coating is golden brown, turning once.
