Baked Salmon (with Lime, Jalapeno Chive And Sour Cream Sauce)

Ingredients

  • Servings: 2
  • 3/4-1 lb salmon fillet
  • 1 tablespoon fresh lime juice
  • 1 1/2 teaspoons butter, melted
  • salt and pepper
  • 1 1/2 teaspoons butter
  • 2 jalapeno chiles, seeded and julienned
  • 1/3 cup sour cream
  • 3/4 teaspoon fresh lime juice
  • to taste salt
  • to taste pepper
  • to taste fresh chives, snipped
  • to taste lime wedge

Recipe

  • 1 preheat oven to 500 degrees.
  • 2 butter baking dish. place salmon in dish skin side down.
  • 3 mix lime juice and butter. brush over salmon.
  • 4 sprinkle with salt and pepper. let stand 15 minutes.
  • 5 bake until fish is almost opaque, about 9 minutes per inch of thickness.
  • 6 meanwhile prepare sauce:
  • 7 melt butter in heavy small saucepan over medium-low heat. add chilies and cook until tender, stirring occasionally, about 3 minutes.
  • 8 add sour cream and stir until heated through; do not boil.
  • 9 mix in lime juice. add salt and pepper.
  • 10 transfer fish to platter. spoon sauce over.
  • 11 sprinkle generously with chives.
  • 12 garnish with lime wedges.
