Baked Red Snapper

Ingredients

- 10 ounces red snapper fillets, cut in serving size
- 2 teaspoons lemon juice
- 3 tablespoons celery, chopped
- 3 tablespoons onions, chopped
- 2 tablespoons yellow bell peppers, chopped
- 1/4 cup low-sodium vegetable juice
Recipe
- 1 preheat oven to 350°f.
- 2 place fish in greased baking pan; sprinkle with pepper to taste.
- 3 drizzle lemon juice over fish.
- 4 bake for 10 minutes.
- 5 in a saucepan combine celery, onion, green pepper and vegetable juice.
- 6 simmer, uncovered for 10 minutes.
- 7 remove fish from oven; drain off all excess liquid.
- 8 pour the simmered vegetable sauce over fish.
- 9 return fish to oven and bake 15 minutes more or until fish flakes easily when tested with a fork, basting with vegetable sauce occasionally.
