Baked Red Snapper

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 10 ounces red snapper fillets, cut in serving size
  • 2 teaspoons lemon juice
  • 3 tablespoons celery, chopped
  • 3 tablespoons onions, chopped
  • 2 tablespoons yellow bell peppers, chopped
  • 1/4 cup low-sodium vegetable juice

Recipe

  • 1 preheat oven to 350°f.
  • 2 place fish in greased baking pan; sprinkle with pepper to taste.
  • 3 drizzle lemon juice over fish.
  • 4 bake for 10 minutes.
  • 5 in a saucepan combine celery, onion, green pepper and vegetable juice.
  • 6 simmer, uncovered for 10 minutes.
  • 7 remove fish from oven; drain off all excess liquid.
  • 8 pour the simmered vegetable sauce over fish.
  • 9 return fish to oven and bake 15 minutes more or until fish flakes easily when tested with a fork, basting with vegetable sauce occasionally.
