Baked Herb-parmesan Tilapia

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • Servings: 2
  • 3 tablespoons parmesan cheese
  • 3 tablespoons italian seasoning
  • 1/8 teaspoon cayenne
  • salt & freshly ground black pepper
  • 1/4 cup french breadcrumbs, finely ground
  • 1/4 cup unsalted butter or 1/4 cup olive oil
  • 3 (4 ounce) tilapia fillets

Recipe

  • 1 preheat oven to 400°f.
  • 2 in shallow dish, melt butter *if using* or pour in olive oil. (can use a mix of both, if preferred.)
  • 3 in another shallow dish, mix first 5 ingredients.
  • 4 cover baking sheet with foil and spray lightly with cooking spray.
  • 5 wash and dry fillets.
  • 6 dip fillets in butter/oil to coat and dredge in herb-crumb mixture to completely cover.
  • 7 let dry on wire rack for about 5 minutes to “setâ€? coating.
  • 8 place on foil-covered sheet and bake for about 10-12 minutes or until fish flakes easily.
