Baked Herb-parmesan Tilapia

Ingredients

- 3 tablespoons parmesan cheese
- 3 tablespoons italian seasoning
- 1/8 teaspoon cayenne
- salt & freshly ground black pepper
- 1/4 cup french breadcrumbs, finely ground
- 1/4 cup unsalted butter or 1/4 cup olive oil
- 3 (4 ounce) tilapia fillets
Recipe
- 1 preheat oven to 400°f.
- 2 in shallow dish, melt butter *if using* or pour in olive oil. (can use a mix of both, if preferred.)
- 3 in another shallow dish, mix first 5 ingredients.
- 4 cover baking sheet with foil and spray lightly with cooking spray.
- 5 wash and dry fillets.
- 6 dip fillets in butter/oil to coat and dredge in herb-crumb mixture to completely cover.
- 7 let dry on wire rack for about 5 minutes to “set� coating.
- 8 place on foil-covered sheet and bake for about 10-12 minutes or until fish flakes easily.
