Codfish Cakes With Green Onions & Dill

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 lb fresh cod fish fillets or 1 lb frozen cod fish fillet, thawed and drained
  • 2 cups fresh breadcrumbs, course
  • 1/4 cup green onion, chopped
  • 2 eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon dill weed
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup butter or 1/4 cup margarine

Recipe

  • 1 flake cod fillets apart with fork or mallet.
  • 2 in medium bowl stir together flaked cod and remaining ingredients "except" butter. form into 6 patties.
  • 3 melt butter in skillet until sizzling, place 3 patties in skillet, cook over med-high heat until golden brown, turn and continue cooking until browned and fish flakes with fork.
  • 4 repeat with remaining patties.
