Codfish Balls

Total Time: 22 mins Preparation Time: 20 mins Cook Time: 2 mins

Ingredients

  • 1 1/2 cups shredded salt cod fish
  • 1 1/2 cups hot water
  • 2 cups hot mashed potatoes
  • 2 tablespoons butter
  • 2 tablespoons minced onions
  • 1/2 teaspoon allspice
  • 1/2 cup flour
  • oil or shortening (for frying)
  • tomato sauce
  • coleslaw

Recipe

  • 1 soak the codfish in hot water for 3 mins.
  • 2 drain and with hands squeeze as dry as possible.
  • 3 (codfish will expand when wet, but after squeezing it packs back into about 1 1/2 cups.
  • 4 in a bowl mix together the codfish and potatoes, butter, onion, and spice.
  • 5 blend well.
  • 6 with hands shape into 1 and 1/2 inch bowls.
  • 7 roll balls in flour .
  • 8 heat oil or shortening to temp of 375 degrees . fry for 1-2 mins or until balls are golden brown all over.
  • 9 drain on paper towels and serve with tomato sauce and coleslaw.
