C'est Si Bon Smothered Fish Bake

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 1
  • 1 whole fish fillet, of any firm red fleshed fish
  • 1/2 cup lite vegetable oil
  • 1/2 cup wine vinegar, plus a dash
  • 1 lime, juice of
  • 1 onion, thin sliced crossways (more if needed)
  • 1 bell pepper, thin sliced in rings (more if needed)
  • slightly softened butter

Recipe

  • 1 marinade the filets in the oil, vinegar, lime juice mix for half an hour or so.
  • 2 use a glass or stainless steel bowl.
  • 3 turn them gently to coat well.
  • 4 put a good layer of the onion bell pepper slices in the bottom of a baking dish.
  • 5 lay the fillets on top.
  • 6 cover with another layer of the onion and bell pepper slices.
  • 7 cover tightly with foil.
  • 8 bake at 400 degrees f for 40 minutes.
  • 9 uncover, pour off the liquid.
  • 10 dot well with the softened butter.
  • 11 splash with a bit more wine vinegar.
  • 12 put under the broiler for a few moments to lightly brown.
