Capesante Al Forno (baked Scallops)

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 lb bay scallop
  • 4 tablespoons breadcrumbs
  • 2 teaspoons unsalted butter
  • salt and pepper
  • italian parsley, chopped

Recipe

  • 1 preheat oven to 400°f.
  • 2 in a small bowl, combine olive oil, lemon juice, garlic, scallops, and some parsley. season with salt and pepper. stir well to combine and set aside.
  • 3 spray 4 ramekins with cooking spray. use a slotted spoon to place enough scallops into each so they are filled about 3/4 full and equally divided. top each ramekin with 1 tbsp of breadcrumbs and dot with 1/2 tsp of butter each.
  • 4 bake until golden and bubbly - about 10-15 minutes.
