Apricot Ginger Salmon

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 4 cinnamon sticks (3 in each)
  • 2 tablespoons ginger, chopped
  • 1 (12 ounce) can apricot nectar
  • 2 tablespoons reduced sodium soy sauce
  • 4 pieces fresh salmon (4 oz each)

Recipe

  • 1 mix cinnamon sticks, ginger, apricot nectar, and soy sauce in medium sauce pan. boil gently and reduce volume by 1/2 (about 20 minutes). strain and keep the juice and cinnamon sticks.
  • 2 brush fish with juice and bake for 4-5 minutes in 350 degree oven.
  • 3 brush tops with more juice and broil for another 5-7 minutes until fish is done. fish should be blackened when done.
  • 4 pour some juice on each plate and place fish on plate. garnish with pieces of cinnamon sticks.
  • 5 serve with your favorite rice, asparagus, or string bean side dish.
