Baked Bluefish In Wine

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 3 -4 lbs bluefish fillets
  • 1 large onion, sliced
  • 2 tomatoes, thinly sliced
  • salt
  • pepper
  • 1/2 teaspoon oregano
  • 2 tablespoons parsley, chopped
  • 1/2 cup dry wine
  • 1/2 cup sour cream

Recipe

  • 1 preheat oven to 375 degrees f.
  • 2 arrange layer of sliced onions and tomatoes in shallow baking dish.
  • 3 season with salt, pepper, oregano and parsley.
  • 4 salt and pepper the fish and place on top.
  • 5 pour the wine over the whole thing and cover tightly with foil.
  • 6 bake 50 minutes at 375 degrees until fish flakes.
  • 7 remove fish to warm platter.
  • 8 stir sour cream into the onion and tomatoes and reheat, but don't boil.
  • 9 spoon around the fish and serve.
