Cajun Shrimp Flambe

Ingredients

- 1 lb raw large shrimp, peeled and deveined (25-30 count)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup red onion, diced
- 4 tablespoons tequila
- 1/2 bunch cilantro, chopped
- 2 tablespoons cajun seasoning
- 1 cup heavy cream
- 6 ounces shredded monterey jack cheese or 6 ounces goat cheese
- salt and pepper
Recipe
- 1 heat olive oil in a large skillet.
- 2 add shrimp.
- 3 cook 1 minute on each side, then add garlic and onion, stirring continuously for 1 minute.
- 4 add tequila and cilatro and flambe until flame subsides.
- 5 add cream and turn heat down to medium-low.
- 6 add cajun seasoning.
- 7 stir, then take shrimp out and set aside while sauce thickens.
- 8 check sauce for flavor, and add salt and pepper to taste.
- 9 place shrimp in a baking dish.
- 10 cover with sauce then top with cheese.
- 11 place in 350 degree oven until cheese is bubbly.
- 12 approx 5 minutes.
- 13 garnish with whole cilantro leave if desired and serve immediately.
