Creamy Lemon, Mushroom, Shrimp And Rice

Ingredients

  • Servings: 4
  • 4 cups cooked rice
  • 1 tablespoon garlic-flavored olive oil
  • 16 ounces mushrooms, sliced about 6 cups
  • 1 (250 g) container chive & onion cream cheese
  • 1 lb shrimp, medium size cooked, peeled
  • 2 cups baby spinach leaves
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1/2 cup parmesan cheese, shredded

Recipe

  • 1 heat oil in a large non-stick skillet over medium heat. add mushrooms and cook 6 minutes or until mushrooms are golden. add cream cheese, stirring until melted. add shrimp, spinach and water; cook until heated; about 2 minutes. fold in cooked rice, lemon juice, and more water if needed. top with parmesan cheese and serve.
