Creamy Lemon, Mushroom, Shrimp And Rice

Ingredients

- 4 cups cooked rice
- 1 tablespoon garlic-flavored olive oil
- 16 ounces mushrooms, sliced about 6 cups
- 1 (250 g) container chive & onion cream cheese
- 1 lb shrimp, medium size cooked, peeled
- 2 cups baby spinach leaves
- 1/4 cup water
- 1 tablespoon lemon juice
- 1/2 cup parmesan cheese, shredded
Recipe
- 1 heat oil in a large non-stick skillet over medium heat. add mushrooms and cook 6 minutes or until mushrooms are golden. add cream cheese, stirring until melted. add shrimp, spinach and water; cook until heated; about 2 minutes. fold in cooked rice, lemon juice, and more water if needed. top with parmesan cheese and serve.
