Bok Choy With Thai-style Dressing

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs bok choy
  • 1 teaspoon salt
  • 1 tablespoon sunflower oil
  • 1 tablespoon fresh ginger, grated finely (about 1in piece)
  • 1 red chili pepper, seeded and finely diced
  • 2 garlic cloves, very finely chopped
  • 2 tablespoons light soy sauce
  • 2 teaspoons thai fish sauce (nam pla)

Recipe

  • 1 place the bok choy in a steamer set over a pan of boiling water and sprinkle over the salt.
  • 2 cover and cook for 3-5 mins until tender, then tip into a warmed serving dish.
  • 3 meanwhile heat a wok or large frying pan until hot. add the oil, ginger, chili and garlic and stir fry for 1 minute.
  • 4 add the soy sauce and fish sauce, heat through and drizzle over the bok choy to serve.
