Cajun Cocktail & Cajun Tartar Sauces

Ingredients

  • 1 tablespoon onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon butter
  • 1/3 cup water
  • 1/3 cup tomato paste
  • 1 tablespoon prepared horseradish
  • 2 teaspoons lemon juice
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground red pepper
  • 1/4 teaspoon fresh horseradish, grated (optional)
  • 1 cup mayonnaise or 1 cup salad dressing
  • 1/4 cup sweet pickle, finely chopped
  • 2 tablespoons green onions, finely chopped
  • 1 tablespoon parsley, finely snipped
  • 1 tablespoon fresh lemon juice
  • 1 -2 dash bottled hot pepper sauce

Recipe

  • 1 cajun cocktail sauce:.
  • 2 in a large pot cook onions and garlic in butter until tender.
  • 3 stir in the water, tomato paste, prepared horseradish, lemon juice, dry mustard, salt and ground red pepper.
