Coconut Green Curried Shrimp, Mango, And Snow Peas Over Rice

Ingredients

- 12 ounces long grain rice, cooked
- 1 lb large shrimp, cleaned, deveined, and peeled
- 1 tablespoon canola oil
- 2 tablespoons green curry paste
- 1/3 cup light coconut milk
- 1 tablespoon fish sauce
- 1 cup snow peas
- 1 mango, cut into 1/2 inch pieces
- 4 scallions, cleaned, trimmed, and sliced
- 4 lime wedges, to serve
- 1/4 cup cilantro, roughly chopped
- salt
- pepper
Recipe
- 1 heat oil in a large skillet over medium heat. add snow peas, and cook about 2-3 minutes.
- 2 combine coconut milk, fish sauce, and curry paste in a bowl. season with a pinch of salt & pepper. add to the hot pan, and bring to a simmer.
- 3 add shrimp. cook for about 1-2 minutes.
- 4 add the mango. cook another 1-2 minutes, or until shrimp is pink. do not over cook the shrimp.
- 5 serve over the rice on 4 separate plates. add scallions, cilantro, and lime wedges to garnish.
