- 2 tablespoons extra virgin olive oil
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt, less if that's your preference
- 1/4 teaspoon cayenne
- 4 catfish fillets (about 1 1/2 pounds)
Recipe
- 1 preheat broiler.
- 2 line pan with foil for easy clean up.
- 3 combine oil, paprika, oregano, salt and cayenne pepper in a small bowl.
- 4 place catfish on foil-lined pan and brush both sides with spice mixture. arrange catfish, flat side up, for initial cooking.
- 5 broil about 10 minutes (until catfish reaches an internal temperature of 145 degrees f), carefully turning fillets once halfway through cooking. don't overcook!
