Cafe Yk's New England Style Clam Chowder

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 12 pieces bacon, chopped
  • 1 medium onion, diced
  • 1 (51 ounce) can chopped clams with juice, juice reserved
  • 2 potatoes, cubed 2
  • 4 celery ribs, diced
  • 1 cup heavy cream
  • 2 cups low-fat milk
  • 1 teaspoon old bay seasoning, seasoning
  • 2 tablespoons clam base
  • instant mashed potatoes, as needed for thickening

Recipe

  • 1 add bacon to sauce pan and cook on medium low heat until crispy.
  • 2 add onion and cook until translucent.
  • 3 add celary and continue cooking until soft.
  • 4 add clam juice and potatoes.
  • 5 cover and cook until potatoes are tender, stiring occasionally
  • 6 add clams, clam base, old bay, cream, and milk
  • 7 stir together.
  • 8 cook for about 30-45 minutes.
  • 9 stir occasionally.
  • 10 whisk in instant mashed potatoes as needed for thickening.
  • 11 adjust seasoning with salt & pepper as needed.
