Cafe Yk's New England Style Clam Chowder

Ingredients
- Servings: 12
- 12 pieces bacon, chopped
- 1 medium onion, diced
- 1 (51 ounce) can chopped clams with juice, juice reserved
- 2 potatoes, cubed 2
- 4 celery ribs, diced
- 1 cup heavy cream
- 2 cups low-fat milk
- 1 teaspoon old bay seasoning, seasoning
- 2 tablespoons clam base
- instant mashed potatoes, as needed for thickening
Recipe
- 1 add bacon to sauce pan and cook on medium low heat until crispy.
- 2 add onion and cook until translucent.
- 3 add celary and continue cooking until soft.
- 4 add clam juice and potatoes.
- 5 cover and cook until potatoes are tender, stiring occasionally
- 6 add clams, clam base, old bay, cream, and milk
- 7 stir together.
- 8 cook for about 30-45 minutes.
- 9 stir occasionally.
- 10 whisk in instant mashed potatoes as needed for thickening.
- 11 adjust seasoning with salt & pepper as needed.
