Coconut Curry And Shrimp Soup

Ingredients

- 4 cups chicken stock
- 2 1/2 tablespoons sugar
- 2 1/2 tablespoons fish sauce
- 1 1/2 teaspoons thai red curry paste
- 2 (14 ounce) cans unsweetened coconut milk
- 8 ounces mushrooms, sliced
- 1 lb medium shrimp, peeled and deveined
- 1/3 cup chopped fresh cilantro
- 3 tablespoons lime juice
- whole cilantro leaf (to garnish)
Recipe
- 1 in large pot bring stock, sugar, fish sauce and curry paste to a boil; boil for 1 minute. add coconut milk and return to a boil.
- 2 add mushrooms, reduce heat and simmer, about 4 minutes. add shrimp and simmer until pink and opaque, about 2 minutes.
- 3 remove from heat and stir in chopped cilantro and lime juice. serve garnished with cilantro leaves.
