Coconut Curry And Shrimp Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 4 cups chicken stock
  • 2 1/2 tablespoons sugar
  • 2 1/2 tablespoons fish sauce
  • 1 1/2 teaspoons thai red curry paste
  • 2 (14 ounce) cans unsweetened coconut milk
  • 8 ounces mushrooms, sliced
  • 1 lb medium shrimp, peeled and deveined
  • 1/3 cup chopped fresh cilantro
  • 3 tablespoons lime juice
  • whole cilantro leaf (to garnish)

Recipe

  • 1 in large pot bring stock, sugar, fish sauce and curry paste to a boil; boil for 1 minute. add coconut milk and return to a boil.
  • 2 add mushrooms, reduce heat and simmer, about 4 minutes. add shrimp and simmer until pink and opaque, about 2 minutes.
  • 3 remove from heat and stir in chopped cilantro and lime juice. serve garnished with cilantro leaves.
