Corn And Salmon Chowder

Ingredients
- Servings: 4
- 1 (7 1/2 ounce) can salmon, skin and bones removed,but liquid reserved
- 2 teaspoons margarine
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 clove garlic, minced
- 3 cups diced potatoes
- 1 cup diced carrot
- 1 cup chicken stock
- 1 cup water
- 1/2 teaspoon pepper
- 1 (14 ounce) can 2% evaporated milk
- 1 (10 ounce) can cream-style corn
Recipe
- 1 melt margarine in a large pot.
- 2 saute onion, celery and garlic.
- 3 add potatoes, carrot, stock, water and pepper to pot.
- 4 bring to a boil, reduce heat and simmer until vegetables are tender.
- 5 add flaked salmon, reserved salmon liquid, milk and corn.
- 6 simmer until heated through.
- 7 adjust seasoning.
