Corn And Salmon Chowder

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 (7 1/2 ounce) can salmon, skin and bones removed,but liquid reserved
  • 2 teaspoons margarine
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 clove garlic, minced
  • 3 cups diced potatoes
  • 1 cup diced carrot
  • 1 cup chicken stock
  • 1 cup water
  • 1/2 teaspoon pepper
  • 1 (14 ounce) can 2% evaporated milk
  • 1 (10 ounce) can cream-style corn

Recipe

  • 1 melt margarine in a large pot.
  • 2 saute onion, celery and garlic.
  • 3 add potatoes, carrot, stock, water and pepper to pot.
  • 4 bring to a boil, reduce heat and simmer until vegetables are tender.
  • 5 add flaked salmon, reserved salmon liquid, milk and corn.
  • 6 simmer until heated through.
  • 7 adjust seasoning.
