hazelnut-citrus encrusted salmon

Ingredients

  • Servings: 4
  • cooking spray
  • 4 (4 ounce) fillets salmon
  • 1/2 cup low-fat mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh rosemary
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped hazelnuts

    Preparation Time: 15 mins Cook Time: 15 mins Ready Time: 30 mins

  • preheat oven to 400 degrees f (200 degrees c). coat a baking sheet with cooking spray.
  • place salmon on prepared baking sheet. whisk mayonnaise and lemon juice together in a bowl until smooth; spread mixture salmon. sprinkle each fillet with rosemary, salt, and black pepper. top each piece with hazelnuts.
  • bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes.
